MAC AND CHEESE

MAC AND CHEESE

pasta:
500g elbow macaroni
oil for boiling
salt to taste

Procedure:
1) Heat oven to 350°F.
2)    In a large sauce pan, with boiling water add salt and oil, cook macaroni half way and drain.

cheese sauce:
½ cup butter
½ cup All purpose flour
1liter half and half (1 part milk/ 1 part cream)
2tbs mustard
400g    sharp cheddar
salt
pepper

Procedure:
In a medium sauce pan, melt butter, stir in flour until smooth, add half and half while stirring constantly until thick then add mustard and cheese, add salt and pepper; stir until cheese is melted

topping:
1/4cup parmesan cheese, powdered or grated
1tsp paprika
1cup bread crumbs
salt
pepper

Procedure:
mix the cheese, paprika and bread crumbs together.

Assembly:
In a large bowl, combine macaroni pasta and cheese sauce; transfer in a large baking dish cover with the topping. bake 15-20 mins or until golden brown
